Triple Cocoa Brownies

 These brownies are for people (like me) who really, really like chocolate.

 


Triple Cocoa Brownies 

  • ½ cup flour
  • 1 cup cocoa
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • ½ cup salted butter
  • ¼ cup milk



1. Line a 10-inch cake pan with parchment paper, and preheat the oven to 350 degrees.

2. In a medium-sized bowl, combine the flour, cocoa, and baking soda. Use a whisk to sift the dry ingredients until mixed thoroughly and airy; try to eliminate any lumps of cocoa.

3. Melt the butter. (I put the butter in a small bowl and pop it in the microwave.) In another large bowl, use an electric mixer to beat the sugar and butter together until fluffy. Then beat in the eggs and vanilla until smooth.

4. Add half of the dry ingredients to the wet mix and beat until evenly combined. Then add the remaining half of dry ingredients and the milk, beating just until combined. There shouldn’t be any large lumps, but be mindful to not overbeat it here.

5. The batter will be thick. Use a rubber spatula to spoon it into your lined pan. You’ll have to use the spatula to smooth out the batter until evenly flat. It will seem like something is wrong and like this is never going to work, but that’s partly why I love this recipe: it’s a delicious miracle.



6. Place your baking dish in the center of the oven. Set a timer for 20 minutes. If the center looks gooey when the timer goes off, set the timer for another 5 minutes. (The baking time for these brownies is between 20 and 30 minutes, but every oven is different, and every minute counts with brownies, so it’s better to check them often in the end than to risk burning them.) If the center does not look gooey after the 5-minute timer goes off, then take them out and stick a knife in the center. If the knife comes out clean, they’re ready, but if not, pop them back in for another 2 minutes. Repeat the knife trick after the 2-minute timer… you get it. When the knife comes out clean, they’re done.



7. Do your best to not eat the entire pan in one night, or in a 24-hour period, unless you need to, because it’s been a day. Truthfully, these brownies are best eaten within 24-hours. Maybe share?
